
This is designed for two people as hubby and I are often alone for dinner but it can easily be doubled or tripled to meet the needs of your family. Serve it with a side of stuffing and a green veggie for a perfect pre-Christmas meal and little cranberry sauce wouldn’t be amiss either. Speaking of cranberries, a molded cranberry salad would be a welcome side as well.
MAKES: 2 servings
INGREDIENTS:
1 tablespoon vegetable oil
2 pork loin chops
1 ounce butter
1 tablespoon fresh sage, chopped
2 thick slices of onion, cut from the center part
1 apple, halved, no need to peel it but do remove the core
1 tablespoons dark brown sugar or Splenda brown blend
DIRECTIONS:
Preheat the oven to 350F.
Heat oil in a frying pan and then brown chops for 2 minutes on each side, transfer to a plate.
Add the butter to the pan, then when melted, add the sage, onion and apple, cut side down.
Saute for about 5 minutes and then transfer to a oven proof pan or dish large enough to accommodate the pork chops a little later, turning the apple halves cut side up and sprinkle them each with the half sugar.
Roast for about 15 minutes, adding the pork back to them for the last 10 minutes.
