Apple Tree Pork Chops

This is designed for two people as hubby and I are often alone for dinner but it can easily be doubled or tripled to meet the needs of your family. Serve it with a side of stuffing and a green veggie for a perfect pre-Christmas meal and little cranberry sauce wouldn’t be amiss either. Speaking of cranberries, a molded cranberry salad would be a welcome side as well.

MAKES: 2 servings
INGREDIENTS:

  • 1 tablespoon vegetable oil
  • 2 pork loin chops
  • 1 ounce butter
  • 1 tablespoon fresh sage, chopped
  • 2 thick slices of onion, cut from the center part
  • 1 apple, halved, no need to peel it but do remove the core
  • 1 tablespoons dark brown sugar or Splenda brown blend
  • DIRECTIONS:

  • Preheat the oven to 350F.
  • Heat oil in a frying pan and then brown chops for 2 minutes on each side, transfer to a plate.
  • Add the butter to the pan, then when melted, add the sage, onion and apple, cut side down.
  • Saute for about 5 minutes and then transfer to a oven proof pan or dish large enough to accommodate the pork chops a little later, turning the apple halves cut side up and sprinkle them each with the half sugar.
  • Roast for about 15 minutes, adding the pork back to them for the last 10 minutes.
