Muffins For Your Heart

With all of the wonderful treats that abound at this time of year it’s very easy to forget about the health aspect. Have one, or two, of these muffins for breakfast with a glass of milk and you’ll be good for the morning with almost no fat intake. Be aware that these are not light and fluffy, they are a heavy dense muffin that pack a lot of nutrition and good taste.

MAKES: 12 muffins
INGREDIENTS:

  • 3 egg whites
  • 3/4 cup skim milk
  • 1 cup low-fat yogurt (vanilla is good)
  • 3/4 cup applesauce
  • 2 cups whole wheat flour
  • 1/2 cup rolled oat
  • 1/2 cup oat bran
  • 1 tablespoon baking powder
  • 2 teaspoons cinnamon
  • 3/4 cup black currents (or raisins)
  • 3/4 cup dried apricot, diced
  • Splenda for topping

DIRECTIONS:

  1. Beat egg whites lightly.
  2. add milk, yogurt and apple sauce.
  3. In a separate bowl combine dry ingredients and dried fruit.
  4. Add liquid to dry ingredients, combine with care.
  5. Spoon into muffin tins.
  6. Sprinkle Splenda on top of the muffins, as much as you would like.
  7. Bake 350F for 20 minutes or until a tester comes out clean.
