Vegetarian Meatless Ball Soup

Stop here if your looking for a very healthy and delicious soup. It’s very low fat and full of fresh vegetables. You don’t even have to make the meatless balls, most all markets will have frozen in bags. I always keep some in my freezer because they are so good for many things. I’ve also included the ingredients and directions for making ground beef balls if you prefer to use that. Either way this is a real family pleaser that is great for lunch or dinner. If you bake at all make some baking powder biscuits to accompany the soup for a very satisfying repast.
MAKES: 4-6 servings
INGREDIENTS:
- 1/2 cup celery, diced
- 1/2 cup celery leaves, snipped
- 1 large onion, minced
- 2 medium carrots, sliced
- 1 cup raw potatoes, cubed
- 2 cups vegetable broth
- 1 1/2 teaspoons salt
- 2 1/2 cups canned tomatoes, diced or stewed
- 8 -12 purchased vegetarian meatless balls
DIRECTIONS:
- For soup, add all ingredients to Dutch oven.
- Boil for 30 minutes.
- Drop 8-12 meatless balls into the soup and simmer for another 15 mins.
TIP:
If you prefer to use real meat meatballs here’s what you’ll need:
- 1/2 cup fresh breadcrumb
- 1/4 cup milk
- 1 egg, unbeaten
- 1/2 lb ground chuck
Make meatballs:
- Mix all ingredients and shape into 12 balls.
- Refrigerate 30 minutes and then drop into boiling soup and simmer 15 minutes.
