Holiday Treasure Bread

This bread is a “Must Have” for the Fall and Winter holiday seasons. It’s just right in every way for the season and it’s utterly delicious. Everyone in the family will love it from the toddlers to the grandparents. The recipe makes a loaf in an 8×4 pan so it not huge. I strongly recommend that you make two or even more. It vanishes is a real hurry.

MAKES: 1 loaf
INGREDIENTS:

  • 2 large eggs
  • 2/3 cup sugar or Splenda sugar substitute
  • 2 tablespoons canola oil
  • 2 tablespoons light cream
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large peeled tart apple, chopped (use 2 if they are smaller)
  • 2/3 cup fresh cranberries (or frozen, coarsely chopped)
  • 1/2 cup chopped walnuts or pecans

DIRECTIONS:

  • In a mixing bowl, beat the eggs, sugar, oil and cream.
  • Combine the flour, baking powder, cinnamon, baking soda, and salt in a separate bowl.
  • Stir in apples, cranberries and nuts.
  • Add flour mix to the egg mixture and stir just until combined (batter will be very thick).
  • Pour into an 8×4x2″ loaf pan coated with non-stick spray.
  • Bake at 350 F for 45-50 minutes or until toothpick inserted near center comes out clean.
  • Cool for 10 minutes before removing from pan to a wire rack to cool completely.
