Veggie Sausage Supper

I love the hearty and homey flavor, it’s just what you want this time of year (at least in my climate). It’s quite simple and healthy and some folks in the family might not even notice that it’s a vegetarian meal avoiding all of that nasty sat fat that comes with meat sausage. I made it in single serving dishes, if you choose to do that the timing directions remain the same.

MAKES: 6 servings
INGREDIENTS:
1/2 lb vegetarian sausage links or patties, cut into 1/2 in slices or diced
1 red pepper or green pepper, chopped
1 garlic clove, minced
1 teaspoon dried oregano, divided
1 teaspoon onion flakes, divided
5 medium Red Bliss or Yukon Gold potatoes, cut into 3/4 in cubes
1/3 cup white wine or chicken broth
1/4 teaspoon paprika (smoked paprika preferred)

DIRECTIONS:
Preheat oven to 375°F.
Spray a 9 in square baking pan with cooking spray.
In a large pot over med high heat, cook potato cubes until about half cooked, about 5 minutes.
Place on paper towels to dry.
Place the veggie sausage into prepared baking pan.
Top with pepper and garlic, sprinkle with 1/2 of oregano and onion flakes.
Place still hot potatoes in a single layer over pepper.
Pour wine or broth over potatoes.
Sprinkle with paprika and remaining oregano and onion.
Cover pan snugly with foil for 40-45 mins and then remove.
At this point add a small amount of water if it seems too dry.
Continue baking until potatoes are browning, about 15 mins.
