When Nutty Betty Met Mr. Fuji

This is a delicious twist on the old favorite Betty recipes that our mothers and grandmothers made and loved. You’ll find it a perfect way to use some of the fall crop of the delicious Fuji apples. This is easier and faster than making an apple pie as there is no crust to make and roll but it’s every bit as satisfying and man pleasing. If you want to guild the lily (so to speak) then top warm servings with vanilla ice cream or whipped cream.
MAKES: 6 servings
INGREDIENTS:
- 5 cups peeled and sliced Fuji apples
- 1/4 cup orange juice
- 3 tablespoons Frangelico liqueur
- 1/2 cup hazelnuts that have been chopped small (use more if you like)
- 2/3 cup sugar or Splenda sugar substitute
- 3/4 cup flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/8 teaspoon ground anise
- 1/8 teaspoon ground ginger
- 1/2 cup butter
DIRECTIONS:
- Preheat oven to 375 degrees F.
- Place sliced apples in 9 inch pie plate and sprinkle with orange juice and Frangelico.
- Sprinkle the chopped nuts evenly over the apples.
- Combine sugar, flour, and spices in a medium mixing bowl.
- Cut in butter until mixture is crumbly.
- Sprinkle mixture over apples evenly.
- Bake at 375 degrees F for 45 minutes until apples are tender and topping is crisp.
- May serve with a scoop of vanilla ice cream.
