Joe’s Made A Mess Of Himself

This is a simple and delicious way to make sloppy joe’s but don’t let the simplicity fool you. They pack a lot of rich flavor and this is a real family pleaser. The men will line of for seconds and thirds at a cookout. I use veggie “Ground Round” but thats my choice and the recipe was originally made with ground beef so use what you prefer. It’s best served with a potato salad or cole slaw and don’t forget the cold beer and soft drinks.
SERVES: 4
INGREDIENTS:
- 1 tablespoon vegetable oil
- 1 chopped green bell pepper
- 1 chopped red bell pepper
- 2 chopped garlic cloves
- salt
- black pepper, freshly grounded
- 2 lbs vegetarian “Ground Round” (or lean ground beef)
- 1 (8 ounce) can tomato sauce
- 3 tablespoons tomato paste
- 1 cup barbecue sauce (Cattleman’s is my favorite)
- 1 tablespoon worcestershire sauce
- 1 teaspoon hot sauce (recommend Tabasco)
- 4 hamburger buns, split and toasted
- barbecue sauce, for topping
DIRECTIONS:
- Heat oil in a large skillet with straight sides. Add the bell peppers and garlic. Saute until tender, about 3 minutes. Season with salt and pepper.
- Add the ground beef to the vegetables. Stir and cook about 8 minutes, until the meat is no longer pink and fully cooked.
- Add tomato sauce, tomato paste, barbecue sauce, Worcestershire, and hot sauce into the skillet. Stir.
- Simmer until thickened, about 10 minutes.
- Serve on toasted buns with extra sauce.
